Ingredients
- 4 oz yellow peach juice, about 2–3 peaches
- One 1-inch piece of ginger, peeled and thinly sliced
- 1 oz simple syrup
- 1.5 oz white rum
- 1.5 oz ginger beer
- 1 lime wedge
- Ice for shaking & serving
Instructions
- Juice the peaches with a masticating cold press juicer. Or peel and transfer peach slices to a blender and blend until smooth and juicy. Then pour through a fine-mesh strainer or nut milk bag to remove excess pulp.
- In a cocktail shaker add peach juice, ginger, simple syrup, and ice and shake vigorously
- Strain into an ice filled rocks glass and top with ginger beer
- Garnish with lime wedge and peach slices
Notes
Simple Syrup
- 2 cups sugar
- 2 cups water
- In a small sauce pan, dissolve sugar into water over low heat, stirring occasionally
- Once sugar is completely dissolved, remove from heat
- Place liquid into a jar with a lid and cool in the refrigerator for at least 2-3 hours, cooling overnight is best
- Simple syrup can be stored in a jar with a lid for 1-2 months in the refrigerator
