Chill out this summer with our Summeripe “PG-R”… Peach, Ginger, Rum
Ingredients

- 4 oz yellow peach juice, about 2–3 peaches
- 1 oz ginger simple syrup
- 1.5 oz white rum
- 1.5 oz ginger beer
- 1 lime wedge
- Ice for shaking & serving
Instructions
- Juice the peaches with a masticating cold press juicer. Or peel and transfer peach slices to a blender and blend until smooth and juicy. Then pour through a fine-mesh strainer or nut milk bag to remove excess pulp.
- In a cocktail shaker add peach juice, ginger, simple syrup, and ice and shake vigorously
- Strain into an ice filled rocks glass and top with ginger beer
- Garnish with lime wedge and peach slices
Notes
For Ginger Simple Syrup
- 1 cup water
- 1 cup raw sugar
- 1 inch ginger, peeled and sliced
- Bring water, sugar, and ginger slices to a boil until sugar is dissolved
- Once sugar is dissolved, lower heat and let simmer for 15-20 minutes or until liquid reduces by half
- Remove from heat and let sit for 30 minutes
- Pour over a fine mesh strainer into a jar, keep refrigerated.
