Summeripe Black Splendor & Ginger Mojito

Ingredients

  • 4 very ripe Summeripe Black Splendor Plums (or any black plum variety)
  • 12 fresh mint leaves
  • 1.5 oz white rum
  • 1 oz lime juice
  • 1 oz agave nectar
  • 1 oz ginger simple syrup
  • sparkling water
  • ice

Instructions

  1. Slice 3 Summeripe plums over a cocktail shaker, add in lime juice and 6 mint leaves. Muddle until plums are juiced and mint leaves are crushed
  2. Add in rum, handful of ice, and shake
  3. Strain liquid into a glass, add in ginger simple syrup, agave nectar, remaining mint leaves, and Summeripe plum slices. Add in ice and stir ingredients together
  4. Top with a few ounces of sparkling water and enjoy responsibly!

Notes

For Ginger Simple Syrup

  • 1 cup water
  • 1 cup raw sugar
  • 1 inch ginger, peeled and sliced
  • Bring water, sugar, and ginger slices to a boil until sugar is dissolved
  • Once sugar is dissolved, lower heat and let simmer for 15-20 minutes or until liquid reduces by half
  • Remove from heat and let sit for 30 minutes
  • Pour over a fine mesh strainer into a jar, keep refrigerated.
