Ingredients

- 4 very ripe Summeripe Black Splendor Plums (or any black plum variety)
- 12 fresh mint leaves
- 1.5 oz white rum
- 1 oz lime juice
- 1 oz agave nectar
- 1 oz ginger simple syrup
- sparkling water
- ice
Instructions
- Slice 3 Summeripe plums over a cocktail shaker, add in lime juice and 6 mint leaves. Muddle until plums are juiced and mint leaves are crushed
- Add in rum, handful of ice, and shake
- Strain liquid into a glass, add in ginger simple syrup, agave nectar, remaining mint leaves, and Summeripe plum slices. Add in ice and stir ingredients together
- Top with a few ounces of sparkling water and enjoy responsibly!
Notes
For Ginger Simple Syrup
- 1 cup water
- 1 cup raw sugar
- 1 inch ginger, peeled and sliced
- Bring water, sugar, and ginger slices to a boil until sugar is dissolved
- Once sugar is dissolved, lower heat and let simmer for 15-20 minutes or until liquid reduces by half
- Remove from heat and let sit for 30 minutes
- Pour over a fine mesh strainer into a jar, keep refrigerated.
