
Grilled Peach Salsa

Ingredients

2–3 Yellow Peaches or Nectarines, quartered
1–2 Jalapeños
2 limes, halved
1 red onion, thick slices
1 avocado, halved
2 Tablespoons vegetable oil
Salt to taste
Optional- 2 garlic cloves, minced or pressed (not grilled)
Instructions
Brush onion sliced and quartered fruit with oil
Set grill to high heat and grill ingredients until char marks appear;
Red onions 5-7 minutes
jalapeño’s 5-7 minutes or until skin is blistered
Peaches or nectarines 3-4 minutes
Avocado and limes about 1 minute
Let cool.
Dice peaches (or nectarines) red onions, and jalapeños into small bites. Place into medium sized bowl. Squeeze limes over mixture. Add diced avocado and salt. Stir gently.
