It’s Back to School time again and for your family that means busy days with hectic schedules. Clothes shopping, picking up school supplies, meet the teacher night, sports sign-ups and that anxious feeling of the first day of school.
No matter what your child’s age good nutrition will help them navigate these hurdles head-on. That’s why we at Summeripe believe so strongly in Bentology. What’s that you might ask…we know…it sounds like a class but it’s actually a fun, smart way to get your kids to eat healthy portioned nutritious foods that help balance their every day. Here are four really simple ideas that are fun to make and provide all the fruit, vegetables, and proteins your student will need to achieve.
Hummus & Quesadillas
- Summeripe Peaches & Nectarines, cubed
- Strawberries, stems removed & quartered
- Cucumbers
- Baby Carrots
- Hummus, we use 2 oz portion cups with a lid to keep things tidy
- Pretzel Crisps
- Quesadilla, whole wheat tortilla with cheese, cut into four slices
Turkey Sandwich Rounds
- Summeripe Peaches & Nectarines, cubed
- Blueberries
- Baby Carrots
- Celery
- Turkey Sandwiches
- Turkey lunchmeat
- Mayonnaise
- Baby Spinach
- Cheese
- Whole wheat bread
- Make round sandwiches by cutting around a wide mouth cup or glass
- Hardboiled egg, peeled & cut in half
Cucumber Caterpillar & Turkey
- Summeripe Peaches & Nectarines, sliced
- Pretzel crisps
- Cheese
- Turkey lunchmeat, rolled
- Baby cucumber, sliced into bite size pieces
- Candy eye cupcake decoration for caterpillar
Turkey Pinwheels
- Summeripe Peaches & Nectarines, cubed
- Banana, sliced into bite size pieces
- Baby cucumber, sliced into bite size pieces
- Cherry tomatoes, sliced in half
- Hardboiled egg, peeled & sliced in half
- Turkey Pinwheels
- Garden herb or whole wheat tortilla
- Cream cheese or mayonnaise
- Cheese
- Turkey lunchmeat
- Baby Spinach
- Lay tortilla flat and spread an even layer of cream cheese or mayo. Layer turkey, spinach, and cheese leaving the last 1/3 with just cream cheese or mayo. Starting with the end with all ingredients, roll tightly. Slice into pinwheels! To make super clean cuts, refrigerate pinwheels for 2 or 4 hours then slice.

Summeripe Sweet Peach Toastie
- 1 Summeripe yellow peach, sliced
- 2 slices whole wheat or multigrain bread
- 2 Tablespoons crumbled feta cheese
- 1 Tablespoon slivered almonds
- drizzle of honey
- Divide and sprinkle feta cheese onto bread
- Place the nectarine slices on top of feta cheese, sprinkle with slivered almonds and finish with a drizzle of honey
- Place toasties onto a baking sheet and grill on medium-high heat for a couple of minutes or until cheese starts to soften and bread is toasted
- Remove from grill and enjoy!

Summeripe Nectarine & Avocado Toast

- 1 Summeripe yellow nectarine, sliced into 10-12 slices
- 2 slices plain bread (we like sourdough)
- 1 very ripe avocado
- 1/2 lime
- 1-2 tablespoons crumbled feta cheese
- Handful of baby arugula
- Salt & Pepper (to taste)
- Olive oil
- Scoop out avocado into a bowl, add in lime juice, salt & pepper. Roughly mash the avocados with a fork.
- Split avocado mixture onto the two bread slices, add nectarine slices and crumbled feta.
- Place onto a baking sheet to toast in the oven or on the grill (medium high heat) until the bread is toasted and cheese is slightly soft.
- Remove from oven/grill and top with a drizzle of olive oil, salt, and baby arugula.

Summeripe Creamy Peach Popsicles
- 4-5 Summeripe yellow peaches, sliced
- 1 cup vanilla greek yogurt
- 2 Tbsp Honey
- Combine peach slices, yogurt, and honey into a blender and blend until smooth
- Pour into popsicle molds
- Freeze for 6-8 hours
- Enjoy!

Summeripe Peach Parfait

- 1 or 2 Summeripe Yellow Peaches, diced
- 1/2 cup Summeripe Peach Granola (or your favorite granola)
- 1/2 cup Non-Fat Greek Yogurt (or your favorite yogurt)
- Place about 1/4 cup of yogurt on the bottom of a glass
- Add a layer of diced Summeripe Peaches onto the yogurt then add 1/4 cup of granola (placing the Summeripe Peaches on the yogurt before the granola will help the granola from getting soggy)
- Add another layer of yogurt on top of the Summeripe Peaches and granola
- Top with more Summeripe Peaches and granola
- Enjoy!
Summeripe Peach Quinoa Flax Seed Granola

- 1/2 cup Summeripe peach puree, approx. 2 Summeripe peaches, skin removed, sliced & pitted
- 1/4 cup honey or agave nectar
- 2 tablespoons coconut oil
- 1 cup old fashion oats (not quick cooking)
- 1/2 cup quinoa, rinsed and drained
- 1/2 cup pumpkin seeds
- 1/2 cup sliced almonds
- 1/4 cup flax seeds
- 1/4 cup brown sugar
- 1 teaspoon salt
- 1/4 teaspoon cinnamon
- Pinch ground ginger
- Preheat oven to 300 degrees.
- Place peach slices into a blender and puree until smooth. (Tip-Slicing peaches over the blender will help capture all the peach juice)
- In a small bowl combine peach puree, honey or agave nectar and coconut oil, whisk until blended. Set aside.
- In a medium bowl combine and mix all dry ingredients.
- Add the peach puree mixture to the dry ingredients and toss to coat.
- Line a 11x16 baking sheet with parchment paper, evenly spread granola mixture onto parchment paper. Bake for 45 minutes or until golden brown. Remove from oven and let cool for 30 minutes.
- Once cooled, break crisp granola into bite size pieces, store in an air tight container/jar.
- Yields 4 cups of Summeripe Peach Quinoa Flax Seed Granola
Summeripe Peach & Grilled Corn Salad
- 3 Summeripe Yellow Peaches, diced
- 4 ears Yellow Corn, shucked
- 3 roma tomatoes, diced
- 3-4 green onions, thinly sliced
- 2 avocados, diced
- 1-2 serrano peppers, minced
- 2 Tablespoons fresh squeezed lemon juice
- 2 Tablespoons seasoned rice vinegar
- Salt & Pepper to taste
- Grill corn on moderately high heat until char marks are visible on all sides, about 10-15 minutes
- Remove grilled corn kernels and place into a medium size bowl
- Add in Summeripe Peaches, green onions, serrano peppers, lemon juice, seasoned rice vinegar, and tomatoes into the bowl and stir
- Add in avocados and stir gently
- Add salt and pepper to taste and enjoy!
- We love to eat the Summeripe Peach and Grilled Corn Salad by itself but it is also great on grilled chicken or fish

Summeripe Plum Bran Muffins
- 2 Summeripe Plums, diced
- 1 cup all-bran cereal
- 1 cup flour
- 1 egg
- 1/2 cup orange juice
- 1/4 cup sugar
- 1/4 cup canola oil
- 2 tablespoons raw sugar (cane turbinado)
- 2 1/2 teaspoons of baking powder
- 1/2 teaspoon salt
- Pre-heat oven to 375 degrees. Combine bran cereal and orange juice in a bowl; let stand several minutes for the cereal to absorb the juice.
- In a separate bowl, combine flour, both sugars, baking powder and salt.
- Stir egg and oil into bran cereal until well mixed.
- Add bran cereal mixture and diced plums to the dry ingredients; stir only until dry ingredient are moistened.
- Spoon thick batter into greased muffin cups.
- Bake at 375 degrees for 20 to 25 minutes or until golden brown.
- Remove from pan and serve warm.

Summeripe Peach & Greek Yogurt Muffins with Bran Crumb Topping

- 2 Summeripe Peaches, diced
- 1 egg
- 2 cups flour
- 12 oz. (or 1 1/4 cups) plain Greek yogurt
- 1/2 cup raw sugar
- 1/2 cup canola oil
- 1/4 cup light brown sugar
- 2 tablespoons honey
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon pure vanilla extract
- 1 cup All-Bran cereal
- 1/2 cup walnuts
- 1/4 cup Summeripe Peaches, diced
- 6 tablespoons butter, melted
- 4 tablespoons light brown sugar
- Preheat oven to 400 degrees. Grease muffin pan or line with paper liners.
- In a large bowl mix the yogurt and honey.
- Add Summeripe Peaches, both sugars, canola oil, vanilla and egg to the yogurt mixture, mixing until combined.
- In a separate bowl, stir together the flour, baking powder and baking soda.
- Add the dry ingredients to the wet ingredients and mix until just combined.
- Combine the bran, walnuts and sugar in a food processor until coarsely ground.
- Stir in the melted butter.
- Add in the diced Summeripe Peaches
- Fill the prepared muffins cups with batter and divide the crumb topping over each muffin.
- Bake for 20 to 25 minutes. The muffins are done when a toothpick inserted in the center comes out with moist crumbs attached.Transfer to a cooling rack and allow to cool completely.
- Add in Summeripe Plums for another delicious summer time treat!

Summeripe Donut Peach “Donuts”

- 6 Summeripe Galaxy Donut Peaches, cored
- 1 cup Greek Yogurt, plain or vanilla
- Your favorite toppings & sprinkles
- Core the Summeripe Galaxy Donut Peaches with a small pairing knife.
- For easy dipping, spoon the greek yogurt into a bowl that is large enough to dip the donut peaches into.
- Dip the top half of the Summeripe Donut Peach into the yogurt then add as many sprinkles as you wish.
- We like to slice our Summeripe Donut Peach "Donuts" into bite size pieces and eat with toothpicks.
