Description

What is a Crostini? Crostini is Italian for little crusts. We love our little crusts to be topped with fresh yellow nectarines, creamy mozzarella cheese, microgreens, and finished with a drizzle of reduced balsamic vinegar.

Ingredients

1 Baguette, sliced about 1/4 inch thick

1 yellow peach

1 yellow nectarine

6 oz fresh mozzarella, sliced

23 slices of thinly sliced prosciutto, cut into 14 bite size pieces

Microgreens (We used basil, arugula, and sunflower sprouts)

Reduced balsamic vinegar

Olive oil

Sea Salt


Instructions

Preheat oven (or grill) to 350 degrees. Brush both sides with olive oil and arrange sliced on to a large rimmed baking sheet.

Bake until both sides are brown and crisp, about 10-15 minutes. 

While crostinis are baking, thinly slice the peaches and nectarines, mozzarella, and prosciutto.

Layer mozzarella, prosciutto, and nectarine slices on to the toasted crostini. Lightly drizzle with reduced balsamic vinegar then top with your favorite microgreen. Add sea salt to taste.

Ingredients

2 very rip yellow peaches, peeled and finely diced

2 very ripe bananas, peeled

2 Tbsp fresh lemon juice (About 1 lemon)

1/2 cup brown sugar

1/2 cup butter

1 1/2 cup whole wheat flour

1/2 cup wheat germ

1/2 tsp salt

1/2 tsp baking soda

1/2 tsp baking powder

Optional:

1 cup walnuts, chopped


Instructions

  1. Preheat oven to 375 degrees.
  2. Mash bananas and peaches and mix them with the lemon juice.
  3. Cream butter and sugar together and add the banana peach mixture, stirring well.
  4. In a separate bowl stir together the dry ingredients. Add to the banana peach mixture and stir in nuts if desired.
  5. The dough will be very stiff. Turn into 4 small loaf pans and bake for 20-25 minutes. Or turn into 1 large loaf pan and bake for 30-45 minutes.
  6. To test for doneness, insert a knife into the load; if it comes out clean, the bread is done.

Peach Lemon Poppy Seed Bread

Ingredients

1 cup coarsely blended Summeripe peaches. About 2 or 4 peaches peeled, pit removed and quartered
1/2 cup butter – room temperature
1/2 cup granulated sugar
1/2 cup brown sugar
1/2 cup plain Greek yogurt
1 egg – slight beaten
2 Tablespoons lemon zest
1 Tablespoon fresh lemon juice
1 1/2 cup flour
1 1/2 cup wheat flour
2 Tablespoons poppy seeds
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

Instructions

  1. Preheat oven 375 degrees
  2. Place peach slices into a food processor or blender, blend until slightly chunky or if desired until smooth puree. Measure out 1 full cup of mixture and set aside.
  3. In a large bowl, mix butter, granulated sugar and brown sugar until creamy. Add egg, yogurt, peach puree, lemon zest and lemon juice and mix together.
  4. In a separate medium size bowl mix the flours, baking powder, baking soda and salt.
  5. Add dry ingredients to the peach mixture and stir only until the dry ingredients is mix – don’t over mix.
  6. Turn into a greased loaf pan and bake 30 to 45 minutes. To test for doneness, insert a toothpick or knife into the loaf; if it comes out clean, the bread is done.

Notes

Makes 1 loaf or 4 small loafs. (Bake 20 – 25 minutes for small loaf)

Rascal Mandarins add a bright citrus twist to this classic shrimp ceviche appetizer.

Ingredients

  • 1 lb. shrimp, shelled and deveined
  • 16 mandarins
  • 2 Meyer lemons
  • 2 limes
  • 1 lemon
  • 2 cucumbers, peeled and finely diced
  • 1 or 2 jalapeños, finely diced
  • 1 red onion, finely diced
  • ¼ bunch cilantro (or more to taste), coarsely chopped
  • Pink Himalayan sea salt
  • White pepper

Instructions

  1. Quickly and gently poach the shrimp in salted water.
  2. Cut the shrimp into bite size pieces.
  3. Juice the Meyer lemons, lemon, lime, and 1 cup of mandarin juice and add to shrimp and marinate for 15-30 minutes. Make sure that the shrimp is fully submerged in the citrus juice.
  4. Add the diced fresh ingredients to the shrimp and citrus juice. Stir gently to combine.
  5. Add salt and pepper to taste.
  6. Cut the avocados in half and remove the pits.
  7. Spoon ceviche onto avocado halves.

Description

Try something new this year and make your own hummus. Made from five simple ingredients, its name in Arabic literally translates to “chickpeas.” These cream-colored beans are full of protein and rich in fiber. A whole Meyer Lemon provides cancer fighting Phytochemicals such as flavonoids, polyphenols, terpenes. Tahini is ground sesame seed paste that adds creaminess and a distinctive nutty flavor. Hummus can be served with pita bread or used as a dip for raw veggies like carrots, celery and bell pepper slices.

  • 2 (15-oz.) cans no-salt-added chickpeas, drained, liquid reserved
  • 5 garlic cloves, minced
  • 1/3 cup tahini
  • 1 whole Meyer Lemon
  • 5 Tbsp. freshly squeezed lemon juice
  • 2 Tbsp. reserved chickpea liquid
  • 1 Tbsp. extra virgin olive oil
  • Salt to taste
  • Paprika or parsley sprigs for garnish, optional

Instructions

  1. Cut Meyer Lemon into quarters and remove any seeds
  2. Add the whole slices, including the skin, into a food processor and blend until smooth
  3. Place all other ingredients, except for salt and optional garnish, into food processor.
  4. Process until mixture is coarsely pureed.
  5. Ad salt to taste.
  6. Serve at room temperature or chilled.
  7. Garnish with a dash of paprika or parsley sprigs

It’s Back to School time again and for your family that means busy days with hectic schedules. Clothes shopping, picking up school supplies, meet the teacher night, sports sign-ups and that anxious feeling of the first day of school.

No matter what your child’s age good nutrition will help them navigate these hurdles head-on. That’s why we at Summeripe believe so strongly in Bentology. What’s that you might ask…we know…it sounds like a class but it’s actually a fun, smart way to get your kids to eat healthy portioned nutritious foods that help balance their every day. Here are four really simple ideas that are fun to make and provide all the fruit, vegetables, and proteins your student will need to achieve.

Starting with the end with all ingredients, roll tightly. Slice into pinwheels! To make super clean cuts, refrigerate pinwheels for 2 or 4 hours then slice.

  • 1 Summeripe yellow peach, sliced
  • 2 slices whole wheat or multigrain bread
  • 2 Tablespoons crumbled feta cheese
  • 1 Tablespoon slivered almonds
  • drizzle of honey

Instructions

  1. Divide and sprinkle feta cheese onto bread
  2. Place the nectarine slices on top of feta cheese, sprinkle with slivered almonds and finish with a drizzle of honey
  3. Place toasties onto a baking sheet and grill on medium-high heat for a couple of minutes or until cheese starts to soften and bread is toasted
  4. Remove from grill and enjoy!

  • 1 Summeripe yellow nectarine, sliced into 1012 slices
  • 2 slices plain bread (we like sourdough)
  • 1 very ripe avocado
  • 1/2 lime
  • 12 tablespoons crumbled feta cheese
  • Handful of baby arugula
  • Salt & Pepper (to taste)
  • Olive oil

Instructions

  1. Scoop out avocado into a bowl, add in lime juice, salt & pepper. Roughly mash the avocados with a fork.
  2. Split avocado mixture onto the two bread slices, add nectarine slices and crumbled feta.
  3. Place onto a baking sheet to toast in the oven or on the grill (medium high heat) until the bread is toasted and cheese is slightly soft.
  4. Remove from oven/grill and top with a drizzle of olive oil, salt, and baby arugula.

  • 1 or 2 Summeripe Yellow Peaches, diced
  • 1/2 cup Summeripe Peach Granola (or your favorite granola)
  • 1/2 cup Non-Fat Greek Yogurt (or your favorite yogurt)

Instructions

  1. Place about 1/4 cup of yogurt on the bottom of a glass
  2. Add a layer of diced Summeripe Peaches onto the yogurt then add 1/4 cup of granola (placing the Summeripe Peaches on the yogurt before the granola will help the granola from getting soggy)
  3. Add another layer of yogurt on top of the Summeripe Peaches and granola
  4. Top with more Summeripe Peaches and granola
  5. Enjoy!
