For the Summeripe Stone Fruit filling

  • 6 cups sliced Summeripe peaches, nectarines, or plums or plumcots (about 8 medium-size fruit)
  • ¾ cup firmly packed brown sugar
  • ¾ cup water
  • 2 ¼ tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 tablespoon butter or margarine
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg

Topping

  • 1 package (18.25 oz) yellow cake mix
  • ½ cup butter or margarine, melted
  • Ground cinnamon for sprinkling on top

Instructions

  1. Preheat oven to 375*F
  2. Combine brown sugar, water, cornstarch, cinnamon and nutmeg in large saucepan. Cook, stirring constantly, until mixture is thickened and bubbly. Add peaches, lemon juice and butter. Cook until peaches are hot, about 4 to 5 minutes. Keep stirring so mix doesn’t stick to bottom of pan.
  3. Pour hot filling into 9×13 rectangular baking dish. Sprinkle dry cake mix evenly on top and press down firmly. Drizzle the melted butter evenly over the cake mix. Sprinkle top lightly with cinnamon.
  4. Bake for 35 to 45 minutes, until top is crisp and light to medium brown.
  5. Serve with vanilla ice cream or whipped cream, if desired.

Bacon-Wrapped Smoked Peach Halves

  • 3 Summeripe Yellow Peaches, halved
  • 6 strips thick cut bacon

Instructions

  1. Preheat smoker to 325 degrees
  2. Cut peaches in half
  3. Wrap 1 bacon slice per peach half around fruit, secure with toothpick
  4. Place peach halves directly on grill, close lid
  5. Turn peach halves half way through (15 minute mark)
  6. Remove and let cool slightly
  7. Serve and enjoy!

Notes

  • You can adapt this simple base recipe in many ways. A drizzle of balsamic reduction and some feta cheese would make a delicious savory/sweet appetizer.
  • Some brown sugar and cinnamon makes an almost peach pie flavor!

Feeling fancy? Our Summeripe White Nectarine, ginger, and thyme champagne cocktail is the perfect drink for summer celebrations or a rejuvenating Sunday brunch.

  • 3 Summeripe White Nectarines (or Peaches), sliced + 1 for garnish
  • 3 cups water
  • 1 cup honey or agave nectar
  • 1 large chunk (about 1 inch) ginger, peeled and sliced
  • Handful of fresh thyme sprigs + more for garnish
  • 1 bottle of your favorite champagne or sparkling wine

Instructions

  1. In a saucepan combine water and honey over medium-to-medium high heat and bring to a light boil. Turn the heat down and stir until honey dissolves completely.
  2. Add in Summeripe White Nectarines slices, ginger, and thyme sprigs. Simmer for 5-7 minutes then remove thyme sprigs. Continue to simmer the Summeripe White Nectarines and ginger until liquid had reduced by about 1/3, about 15-20 minutes, stirring occasionally.
  3. Remove from heat and let cool for 10-15 minutes.
  4. Strain the liquid into to a large mason jar. Discard the ginger.
  5. To assemble drink, place a fresh Summeripe White Nectarine slice into a champagne flute and add 1-2 tablespoons of the Summeripe White Nectarine-ginger-thyme simple syrup. Pour in champagne and enjoy!

Notes

  • This recipe makes more Summeripe White Nectarine-ginger-thyme simple syrup than what is needed for 12 cocktails. Store the extra simple syrup in the refrigerator

Summeripe Black Splendor & Ginger Mojito

  • 4 very ripe Summeripe Black Splendor Plums (or any black plum variety)
  • 12 fresh mint leaves
  • 1.5 oz white rum
  • 1 oz lime juice
  • 1 oz agave nectar
  • 1 oz ginger simple syrup
  • sparkling water
  • ice

Instructions

  1. Slice 3 Summeripe plums over a cocktail shaker, add in lime juice and 6 mint leaves. Muddle until plums are juiced and mint leaves are crushed
  2. Add in rum, handful of ice, and shake
  3. Strain liquid into a glass, add in ginger simple syrup, agave nectar, remaining mint leaves, and Summeripe plum slices. Add in ice and stir ingredients together
  4. Top with a few ounces of sparkling water and enjoy responsibly!

Notes

For Ginger Simple Syrup

  • 1 cup water
  • 1 cup raw sugar
  • 1 inch ginger, peeled and sliced
  • Bring water, sugar, and ginger slices to a boil until sugar is dissolved
  • Once sugar is dissolved, lower heat and let simmer for 15-20 minutes or until liquid reduces by half
  • Remove from heat and let sit for 30 minutes
  • Pour over a fine mesh strainer into a jar, keep refrigerated.

  • 34 tea bags, or more depending on how strong you prefer your tea
  • 8 cups filtered water

Instructions

  1. Fill jug or large mason jar with water, place tea bags in water.
  2. Set out in the sun for 1-3 hours, depending on how strong you prefer your tea
  3. Once tea is done, add in sliced Summeripe Peaches
  4. To serve, either set out Summeripe Peach Simple Syrup and add as much peachy sweetness as you like or add all of the Summeripe Peach Simple Syrup to the tea and peach slices
  5. Serve over ice and garnish with a Summeripe Peach Slice

  • 3 very ripe Summeripe yellow peaches, thinly sliced
  • 1 1/2 cups raw sugar
  • 2 cups water

Instructions

  1. Bring water, sugar, and peach slices to to a boil in a saucepan. Then lower heat and use a wooden spoon or wooden muddler to stir and crush peaches
  2. Once sugar is dissolved and peaches are crushed, remove from heat and let sit for 30 minutes
  3. Pour over a fine mesh strainer to strain out peaches, use a wooden muddler or the back of a spoon to squeeze all the juices out of the peaches.
  4. Store in refrigerator

  • One 1-inch piece of ginger, peeled and thinly sliced
  • 1 1/2 teaspoons simple syrup
  • 1 1/2 ounces white rum
  • 1 1/2 ounces ginger beer
  • 1 lime wedge
  • Ice for shaking & serving

Instructions

  1. In a cocktail shaker, slice peaches and muddle with ginger and simple syrup
  2. Add in rum; fill the shaker with ice and shake well
  3. Strain into an ice filled rocks glass and top with ginger beer

  • 3 to 4 very ripe Summeripe White Peaches (may substitute Summeripe White Nectarines)
  • 1 lime, sliced into 4 wedges
  • 2 oz white rum
  • 1 oz simple syrup
  • handful of fresh mint leaves
  • splash of lemon-lime soda or sparkling water
  • ice cubes

  1. Slice Summeripe White Peaches over a cocktail shaker to capture all of fruit juice.
  2. Place Summeripe White Peach slices into the cocktail shaker and muddle until slices are thoroughly juiced. Set aside.
  3. Place mint leaves and 1 lime wedge into a sturdy glass, use a muddler to crush mint leaves and lime wedge.
  4. Strain Summeripe White Peach juice into the glass and add in simple syrup and 2 more lime wedges, muddle again to release all of the lime juice.
  5. Fill the glass with ice cubes. Pour rum over the ice cubes then fill the rest of the glass with lemon-lime soda or sparkling water. Gently stir all ingredients together.
  6. Garnish with a Summeripe White Peach slice and lime wedge.

  1. In a small sauce pan, dissolve sugar into water over low heat, stirring occasionally
  2. The simple syrup can be stored in a jar with a lid for 1-2 months in the refrigerator

  • 1/2 cup Summeripe peach puree, approx. 2 Summeripe peaches, skin removed, sliced & pitted
  • 1/4 cup honey or agave nectar
  • 2 tablespoons coconut oil
  • 1 cup old fashion oats (not quick cooking)
  • 1/2 cup quinoa, rinsed and drained
  • 1/2 cup pumpkin seeds
  • 1/2 cup sliced almonds
  • 1/4 cup flax seeds
  • 1/4 cup brown sugar
  • 1 teaspoon salt
  • 1/4 teaspoon cinnamon
  • Pinch ground ginger

  1. Preheat oven to 300 degrees.
  2. Place peach slices into a blender and puree until smooth. (Tip-Slicing peaches over the blender will help capture all the peach juice)
  3. In a small bowl combine peach puree, honey or agave nectar and coconut oil, whisk until blended. Set aside.
  4. In a medium bowl combine and mix all dry ingredients.
  5. Add the peach puree mixture to the dry ingredients and toss to coat.
  6. Line a 11×16 baking sheet with parchment paper, evenly spread granola mixture onto parchment paper. Bake for 45 minutes or until golden brown. Remove from oven and let cool for 30 minutes.
  7. Once cooled, break crisp granola into bite size pieces, store in an air tight container/jar.
