Grilled Summeripe Peaches with Vanilla Ice Cream

Description

Grilled Summeripe Peaches make the perfect bowls to serve your favorite ice cream in. This quick and easy recipe will be your new go-to dessert for any backyard BBQ!

Ingredients

  • 2 Summeripe Yellow Peaches
  • 1 tablespoon Olive Oil
  • Vanilla Ice Cream

Instructions

  1. Cut Summeripe yellow peaches in half and remove the pit
  2. Make the peach “cups” by using a melon baller to remove enough peach flesh to fit a scoop of ice cream, we usually take 3-4 spoonfuls.
  3. Heat a grill to medium-high or 350 degrees
  4. Brush or drizzle “rim” of the peach cups with olive oil to prevent the peaches from sticking to grill
  5. Place Summeripe Peach cups directly onto heat, flesh side down
  6. Grill until grill lines are visible and the peaches are fork-tender, about 4-7 minutes
  7. Remove from grill and let cool for a few minutes
  8. Place a scoop of vanilla ice cream into the center of the Summeripe Peach Cup and enjoy!

  • 1012 Summeripe Peaches and/or Nectarines, enough to fill a 9×13 size pan 3/4 full
  • 2 cups flour
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 cube melted butter
  • 1/8 teaspoon salt
  • Cinnamon

Instructions

  1. Combine flour, sugar, brown sugar, & salt in a mixing bowl
  2. Add melted butter, mixing with a fork until crumbly
  3. Fill a 9×13 pan 3/4 full with sliced fruit
  4. Dust fruit lightly with cinnamon
  5. Pour crumble mixture on top, spreading evenly
  6. Bake at 350 degrees for 30-40 minutes or until top is golden

For the Summeripe Fruit Filling

  • 3 Summeripe Peaches, sliced and pitted (optional to remove skin)
  • 3 Summeripe Nectarines, sliced and pitted
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 Tablespoons cornstarch
  • 1 1/2 Tablespoons fresh lemon juice
  • 1 Tablespoon butter
  • 1 teaspoon cinnamon
  • Dash of nutmeg

For the Crispy Cups

  • 24 sheets phyllo dough, thawed
  • Vegetable cooking spray
  • 2 tablespoons confectioner’s (or powdered) sugar

Instructions

  1. Pre-heat the oven to 375 degrees
  2. In a large sauce pan, combine Summeripe peaches and nectarines, sugars, lemon juice, cornstarch, butter. Cook over medium heat, stirring occasionally for 15-20 minutes or until softens. Stir in cinnamon and nutmeg, set aside
  3. Coat 12 cups of a muffin pan with cooking spray
  4. Lightly coat 2 phyllo sheets with cooking spray and fold each into a 4-inch square. Press one square into the bottom of a muffin cup and spray again, top with the other square. Repeat with the remaining phyllo to form 12 cups. Bake phyllo until golden and crisp, 18 to 20 minutes.
  5. To serve, divide the Summeripe Fruit Filling filling among phyllo cups and dust with confectioner’s sugar
  6. Enjoy!

Instructions

  1. Core the Summeripe Galaxy Donut Peaches with a small pairing knife.
  2. For easy dipping, spoon the greek yogurt into a bowl that is large enough to dip the donut peaches into.
  3. Dip the top half of the Summeripe Donut Peach into the yogurt then add as many sprinkles as you wish.

Notes

  • We like to slice our Summeripe Donut Peach “Donuts” into bite size pieces and eat with toothpicks.

Grilled Summeripe Nectarines (over Ice Cream)

Simple, elegant, delicious. This recipe is the basic standard for grilling nectarines, or any stonefruit.

  • 4 Summeripe Yellow Nectarines
  • 1/3 cup brown sugar
  • 4 tablespoons butter
  • 1/2 teaspoon ground cinnamon

Instructions

Nectarines

  1. Slice Nectarines into wedges (6-8 per. nectarine).
  2. Place directly on pre-heated grill medium high, or 350 degrees, flesh side down.
  3. Check for doneness at 7 minutes, flipping to other flesh side. Definately done by 15 minutes.

Sauce

  1. Combine butter, brown sugar & cinnamon in saute pan, over medium heat.
  2. When fruit is fork tender all the way through, move from grill directly to saute pan.
  3. Stir to coat.

Notes

  • Can be eaten as-is, or put on Vanilla ice cream, or any other sweet cold treat. Reminiscent of warm peach pie a la mode!

  • 4 ripe Summeripe Peaches, pitted, cut into small wedges
  • 4 ripe Summeripe Nectarines, pitted, cut into small wedges

  • 1/4 cup granulated sugar
  • 2 tablespoons whole wheat flour

For the Streusel

  • 1 cup old-fashion rolled oats
  • 1/2 cup whole wheat flour
  • 1/3 cup all-purpose flour
  • 2/3 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 6 tablespoons cold butter

  1. 1. Preheat the oven to 350 degrees.
  2. 2. In a medium bowl mix sugars, flour, cinnamon and nutmeg. Stir until blended.
  3. 3. Place fruit wedges in a 9×13-inch glass baking dish. Fold sugar and flour mixture into the fruit until blended.
  4. 4. Cover with foil and bake for 15 minutes.

For the Streusel

  1. 1. In a bowl, combined oats, flours, sugar and cinnamon, stir until blended.
  2. 2. Work in the butter.
  3. 3. Press the streusel into clumps and sprinkle over the warm fruit.
  4. 4. Bake uncovered for 40 minutes until fruit is tender and topping is golden.

Notes

  • The Summeripe Streusel can be made with all peaches or nectarines. You can substitute plums for the pluots. No need to skin the nectarines, pluots or peaches.
  • For a lower calorie version, substitute granulated sugar for granulated Truvia & use whole-wheat flour in place of all-purpose flour.

The Summeripe Nectarine Glazed Walnuts are the perfect sweet and crunchy treat to serve with cheese, sprinkle on ice cream & salads, or serve them as a sweet treat all on their own.

  • 1 Summeripe Nectarine, skinned, quartered and pitted
  • 4 cups of raw walnut pieces
  • 2 tablespoons butter
  • 3 tablespoons agave nectar or 4 tablespoons of honey

Instructions

  1. 1. Preheat oven to 400 degrees.
  2. 2. Spread walnut pieces onto a cookie sheet. Roast for 10 minutes.
  3. 3. Remove from oven and let roasted walnut pieces cool on the cookie sheet.
  4. 4. In a blender, puree the Summeripe Nectarine pieces to make nectarine pulp.
  5. 5. In a small bowl add agave nectar and 4 tablespoons of the pureed Summeripe Nectarine pulp, stir until blended.
  6. 6. In a skillet over medium high heat, melt butter, being careful not to burn.
  7. 7. Add sweeten Summeripe Nectarine mixture to the hot skillet, stir until blended. Continue to stir until thicken, 1-2 minutes.
  8. 8. Add roasted walnuts to the skillet, stir until coated.
  9. 9. Remove from heat and spread glazed walnuts back onto cookie sheet.
  10. 10. Roast the glazed walnuts at 400 degrees for 6 minutes.
  11. 11. Let cool. Store in refrigerator.

Sweet Summeripe White Peach Dessert Sauce

The Sweet Summeripe White Peach Sauce is the perfect dessert topping for ice cream, gelato, cake, or any other sweet treat!

Ingredients

  • 4 Summeripe White Flesh Peaches, skinned, quartered, and pitted
  • ¾ cup ruby port wine
  • ¼ cup brown sugar
  • 1 tablespoon butter
  • 1 teaspoon vanilla
  • Pinch of cinnamon

Instructions

  1. Puree peaches in a blender.
  2. Strain the puree mixture through a fine sieve into a bowl, pressing to produce 1 cup of fresh white peach nectar. Set the remaining white peach puree aside.
  3. Place 1 cup of the fresh white peach nectar, 1 tablespoon white peach puree and ruby port wine into a medium sauce pan.
  4. Cook over medium heat for 5 minutes. Stirring occasionally.
  5. Add brown sugar stirring until dissolved.
  6. Reduce heat to low and simmer for about 20 minutes or when the sauce is thick enough to coat the back of a spoon, stirring  occasionally.
  7. Add butter and stir until better has melted.
  8. Remove from heat and add vanilla and cinnamon.
  9. Serve over your favorite dessert and enjoy!

Notes

  • Serving Tip: Drizzle the Sweet Summeripe White Peach Sauce over your favorite ice cream or gelato and serve with Summeripe Grilled Peaches and Nectarine Glazed Walnuts!

Instructions
  1. Sprinkle cut side of each peach half with cinnamon. Place peaches on a baking sheet and spray each with nonstick spray.
  2. Prepare charcoal or gas grill for cooking (375°F). Spray a vegetable grilling rack or basket with nonstick spray. Arrange peaches cut-side down on rack or basket. Grill peaches for 3 minutes on each side.

Ingredients
  1. 3 cups fresh Summeripe® peaches, sliced (approximately 4 peaches)
  2. 1/4 cup sugar
  3. 1 tablespoon all purpose flour
  4. 2 tablespoons fresh lemon juice 2 tablespoons fresh lemon juice
  5. 1 sheet prepared puff pastry dough, 10 inches by 16 inches and 1/4-inch thick, thawed
  6. 1 tablespoon unsalted butter, cut into small pieces
Instructions
  1. Preheat oven to 375° F.
  2. In a bowl, combine the peaches, sugar and flour and toss to mix.
  3. Add the lemon juice and stir to combine.
  4. On a floured work surface, roll out the puff pastry into a 15-inch round, about 1/4-inch thick.
  5. Place the pastry on an ungreased baking sheet and spoon the peaches into the center, leaving about 2 inches uncovered around the perimeter. The fruit will be stacked high but will reduce in volume as it cooks.
  6. Fold the uncovered edges of the pastry up to cover as much of the fruit as possible, pinching and tucking the dough as necessary.
  7. Dot the top of the fruit with the butter pieces.
  8. Bake until the pastry is puffed and golden brown, about 30 minutes. Do not undercook.
  9. Cut into wedges and serve hot.
