Caramelized Apricot Bruschetta.. a surprising and delicious combination of sweet apricots, sweet lemon ricotta, and a dash of Tajin.
For the Bruschetta:
1 loaf french bread or baguette
5–6 apricots, sliced
1 Tablespoon agave syrup or honey
Tajin for garnish
Baby arugula for garnish
For the Lemon Honey Ricotta:
1 (15 ounce) container ricotta
1 lemon, juice + zest
2 Tablespoons honey
Pinch of salt
Caramelize the apricots by pouring agave syrup (or honey) in a non stick pan and saute apricots for about 10 minutes over medium heat.
While apricots are cooking, slice the bread into 1 inch thick sliced and toast slightly.
Combine ricotta, honey, salt, lemon juice and zest into a food processor or blender and blend until creamy.
Assemble by spreading ricotta mixture on each slice of bread, add caramelized apricots and garnish with a dash of Tajin and baby arugula.
