Description
Apricot preserves are easy to make and capture the magic of this summer fruit.
Ingredients
2 pounds apricots, pitted and coarsely chopped
3/4 cup sugar
Zest of 1/2 lemon
Juice of 1/2 lemon
1/2 teaspoon vanilla
Instructions
Prepare fruit:
Combine the apricots, sugar, lemon zest, and lemon juice in a medium sized bowl. Mix well and let sit for a few overs or overnight.
Cook the preserves:
After the fruit has macerated, put it in a pot and bring it to a boil on medium heat.
Turn down heat to maintain a vigorous boil, stirring frequently.
After about 10 minutes the fruit will start to break down, becoming glossy and leaving residue on the side of the pot. This is a sign that it’s almost done. Add vanilla and let boil for a few more minutes. Ladle preserves into a sterilized jar and store in refrigerator or freeze
