3 large yellow peaches, peeled, pitted, and sliced into halves
2 Tablespoon salted butter, cut into pea sized pieces
2 Tablespoons whole wheat flour
2 Tablespoons brown sugar
2 Tablespoons pecans (or walnuts), finely chopped
2 sprigs fresh thyme, finely chopped
Place peach halves cup side up in Air Fryer basket. Air fry at 390 degrees for 20 minutes. Flip peaches over at 10 minutes. The peaches should be dark, fully caramelized, and a little crispy looking when they are done.
While peaches air fry, prepare the cobbler topping. In a medium sized bowl, combine butter pieces, brown sugar, flour, and pecans. Working with the back of a fork or fingers, work in butter until moist clumps form.
When peaches are done, remove from basket and cut into bite size pieces. Fill each ramekin halfway then add in the fresh thyme. Fill the ramekin to the top with remaining peach pieces.
Place topping mixture onto peaches. Air fry for 8 minutes at 350 degrees.
