Ingredients
  1. 1 cup flour
  2. 3/4 cup quick oats
  3. 2/3 cup plus 1 tablespoon firmly packed brown sugar, divided
  4. 1/3 cup oat bran
  5. 2 1/2 teaspoons baking powder
  6. 1 teaspoon cinnamon
  7. 1/2 cup low-fat cream cheese
  8. 1 cup peeled, chopped Summeripe® peaches, divided
  9. 1 cup skim milk
  10. 3 tablespoons vegetable oil
  11. 2 teaspoons vanilla extract
  12. 1 egg
  13. 1/3 cup toasted, chopped walnuts
Instructions
  1. Preheat oven to 350°F and spray 12 muffin tins with non-stick cooking spray.
  2. Combine dry ingredients in a medium bowl, reserving 1 tablespoon brown sugar; mix well and set aside.
  3. Stir together cream cheese and the reserved 1 tablespoon sugar. When well blended, fold in 1/4 cup peaches.
  4. Add milk, oil, vanilla and egg to dry ingredients, mixing just until dry ingredients are moistened.
  5. Lightly stir in remaining peaches and walnuts. Spoon 3/4 of the mixture into prepared muffin tine.
  6. Place teaspoonful of the cream cheese mixture in the center of each then spoon remaining batter over the top.
  7. Bake for 20 to 25 minutes or until a toothpick inserted into the center comes out clean.

  2. 1/2 cup low-fat vanilla yogurt
  3. 1/2 cup granola
Instructions
  1. Place half of the fruit in the bottom of a parfait glass.

Ingredients
  1. 1/4 cup boiling water
  2. 1 peach-flavored white tea bag
  3. 1 1/4 cup diced Summeripe® peaches
  4. 3/4 cup low-fat plain yogurt
  5. 2-3 tablespoons honey
  6. 1 tablespoon soy protein powder (optional)
  7. 1/2 tablespoon ground flaxseed
  8. 1 cup ice cubes
Instructions
  1. Pour boiling water over tea bag to make tea concentrate; let stand for a few minutes to steep; remove bag and chill liquid.
  2. Combine chilled tea to concentrate with remaining ingredients in a blender and blend until smooth.
  3. TIP: Make several batched of the tea concentrate ahead of time and keep in the refrigerator. That way you're ready to whip up a batch of this healthy shake!
